How to make a healthy mushroom soup in 5 easy steps

 Mushroom soup is made with cream , bits of mushrooms , onions and chicken broth. Mushrooms are low in sodium and safe to be consumed by those who have high blood pressure. This soup has only 76 calories and great for weight loss as mushrooms are low in calories.

Ingredients:


  • Mushroom finely chopped (500g)
  • Onions roughly chopped (2 medium) 
  • Garlic crushed (1 clove)
  • Butter (90g)
  • Bay leaf (1)
  • Hot chicken stock (1 liter) 
  • Plain flour (2tbsp) 
  • Cream (4tbsp) 
  • Parsley roughly chopped (optional)


Direction:

  • Heat the butter in a pan and cook the onions and garlic until soft but not browned, about 8-10 mins.
  • Add the mushrooms and cook for 3 mins until softened. Sprinkle over the flour and stir to combine.
  •  Pour in the chicken stock, bring the mixture to the boil, then add the bay leaf and cook gently for 10 mins.
  • Remove  the bay leaf, then remove the mushroom mixture from the heat and blitz using a hand blender until smooth.
  • Gently reheat the soup and stir through the cream. If you like, Scatter over the parsley, and now mushroom soup is ready for serve.
